Tupelo Honey is a honey produced from the blossoms of the White Tupelo Gum Tree (Nyssa ogeche) which grows in great numbers within the Chipola and Apalachicola River Swamps of Florida’s Panhandle. In order to capture this unique golden treasure, commercial beekeepers empty their honey bee colonies of any other type of honey that may have been stored within the honeycomb and then place their bees on floating platforms within this area during the months of April and May.

Tupelo honey is light gold in color and has a distinct floral fragrance. The flavor is delicate, delicious, and distinct. Tupelo honey does not crystalize easily due to its naturally high fructose to glucose ratio.
